Recipe: Butternut Squash Bowls

November 20, 2016

I don't know if this can even be called a recipe, but I'm gonna do it anyway.

It's really too east to be true, my friend.

BOWLS - they. are. hot. Get on 'em.

You can make anything a bowl!

Want tacos? Make a taco bowl with a grain, salsa, avocado, veggies, DONE.

Italian? A grain, marinara, veggies, almond flour mixed with nutritional yeast for CHEESE. DONE.

Cozy? See below.

START WITH

Sautéed or roasted squash cubes with fresh garlic and thyme

TOP WITH

½ cup cooked quinoa

Additional veggies of choice

Homemade cranberry sauce or pomegranate seeds once cooled

(Here is a really good refined sugar free/simple ingredients recipe!)

Toasted pumpkin or sunflower seeds

A simple vinaigrette of 1 tbsp lemon juice, 2 tbsp olive oil, "pinch" of maple syrup, 1 tsp dijon mustard, salt and pepper, water as needed.
